These oven roasted Whole30 Sweet Potatoes are crispy on the outside with a soft tender center, flavored with a savory spice blend of chili powder, cumin, and garlic.
Prep sweet potatoes. Preheat your oven to 425°F. Peel the potatoes (if you'd like) and cut into ½-inch cubes.
Toss the sweet potatoes in oil and seasonings. Add the sweet potatoes, oil, chili powder, cumin, garlic powder, salt, and black pepper to a large bowl. Stir until the potatoes are fully coated.
Add the sweet potatoes to the baking sheet. Pour the sweet potatoes onto a large baking sheet, and arrange them in a single layer, making sure there's space in between the cubes.
Roast. Place the baking sheet in the oven for 30-35 minutes until tender, stirring halfway through.
Notes
If using olive oil or coconut oil: Roast sweet potatoes at 425°F. for 15 minutes, flip, and then lower the temperature to 400°F for the remaining time.
