Ingredients

  • ½ sweet onion
  • ½ green pepper
  • ½ red pepper
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 6 ounce can tomato paste
  • 14 ounce can diced fire-roasted tomatoes
  • 2 tablespoons organic honey
  • 1.5 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • ¼ cup water

Instructions

  • Dice the onion, red pepper, and green pepper into small pieces, then add the vegetables and oil to a large skillet. Sauté on medium heat until softened, about 5-7 minutes.
  • Add the ground meat to the pan, breaking it up into crumbles with a wooden spoon. Cook the meat until fully browned, then drain the excess fat off the meat and vegetables with a colander. Return the meat mixture back into the large pan.
  • Stir in the tomato paste, fire-roasted tomatoes, honey, seasonings, and water. Cover with a lid and simmer on low heat for 5-8 minutes, until thickened.
  • Serve on gluten-free buns or baked sweet potatoes for a paleo option.
  • Store the sloppy joe meat mixture in the refrigerator for up to 4 days.
