Prep the salmon. Preheat the oven to 375°F. Pat the salmon dry with paper towels and lay the filets on a parchment-lined baking sheet. Season the salmon with salt and black pepper.
Make the honey mustard glaze. Add the whole grain mustard, honey, olive oil, and minced garlic to a small bowl and stir until well combined.
Add the glaze to the salmon. Using a basting brush or spoon, spread the glaze evenly onto the top of each salmon filet.
Bake the salmon. Place the baking tray in the oven to bake for 12-15 minutes, or until the internal temperature reads 145°F. Turn the oven to broil, and broil the salmon for 1-2 minutes. Keep a close eye on the salmon to ensure the top does not burn. Remove the salmon from the oven, garnish with fresh thyme, and serve!
Notes
Use whole grain or "coarse" dijon mustard. This flavorful honey mustard sauce has an incredible texture that you can only get from the coarse dijon.
Use an instant read thermometer. Salmon cooks quickly compared to other proteins, so you may find it hard to tell when it is finished baking. Using an instant-read thermometer helps ensure the salmon is fully cooked.
