These delicious bite-sized HealthySnickers Dates taste exactly like a Snickers bar but with simple ingredients. Each Medjool date is stuffed with creamy peanut butter and crunchy peanuts, dipped in a melty chocolate coating, and sprinkled with more peanuts and flaky sea salt. Gluten-free and Vegan.
¼cupchopped peanuts, divided for stuffing in dates and for sprinkling on top
8ouncesdark chocolate
½tablespoonunrefined coconut oil, melted
flaky sea salt, sprinkle on top
Instructions
Prepare the dates. Using a sharp knife, carefully cut a slit in the center of each date and remove the pit. Line a baking sheet with parchment paper and set aside.
Add the filling. Fill each date with peanut butter (about ½ teaspoon) and add a sprinkle of crushed peanuts on top of the peanut butter. Carefully close the center of dates and place them on the parchment-lined baking sheet. Stick the baking sheet in the freezer for 15 minutes to chill.
Prepare the chocolate coating. Place the dark chocolate and the coconut oil in a microwave-safe bowl. Melt in the microwave in 30-second increments, stirring between each until fully melted about 90 seconds total.
Dip the dates in chocolate. Remove the dates from the freezer. Insert a toothpick into the center of each date, about halfway through, and dip the dates into the melted chocolate until fully coated.
Sprinkle on chopped peanuts and sea salt. Transfer the dates back to the lined baking sheet one at a time, and sprinkle with the remaining crushed peanuts and sea salt. Once all the dates are coated, place the baking tray back in the freezer for another 15 minutes to allow the chocolate to set
Serve. Remove the dates and cut away any excess chocolate coating that may have dripped on the sides for a more polished look. Keep leftover chocolate-covered dates in a sealed container in the fridge for up to a week.
Notes
You can use a piping bag for the peanut butter - Piping allows for more control and keeps the dates looking neater.
Have your toppings ready - The chocolate coating hardens quickly, therefore have a small bowl of chopped peanuts and sea salt nearby.
Use soft fresh dates - For best results, you'll want to make sure the Medjool dates are fresh and not expired.
Use high-qualitychocolate - Use a high-quality dark chocolate bar or chocolate chips for the best flavor. Ghirardelli or Lindt are worth the splurge for this sweet treat.
