Squeeze the juice from a lime and muddle fresh mint leaves. To enhance their aroma, firmly slap the mint leaves against the back of your hand or palm. In a highball or Collins glass, combine 8 to 10 fresh mint leaves with ¾ ounce of lime juice and 1½ teaspoons of cane sugar. Gently muddle the mint to release its fragrant oils, being careful not to break the leaves apart.
Add the rum. Add 2 ounces of white rum, and use a cocktail spoon to stir everything together, making sure the sugar is fully dissolved.
Add ice and club soda. Fill the glass ¾ of the way with ice, then top with 2 ounces of club soda. Using the cocktail spoon, give the cocktail one last stir to pull some of the mint leaves through the ice.
Garnish. Add a sprig of mint to the top of the glass for garnish, and enjoy.
Notes
Use fresh ingredients. There are only a handful of simple ingredients in this mojito recipe, which means quality makes all the difference.
Chill everything. Even though we use ice, you'll want to chill the rum and club soda for an ultra refreshing cocktail.
Taste and adjust. Making a cocktail at home gives you a chance to customize your drink to your liking. If you prefer a tarter mojito, add an extra teaspoon of lime juice. If you want it sweeter, stir in a bit more sugar the next time.
