Prep the ingredients. Add the ground turkey, red onion, jalapeño, minced garlic, cilantro, smoked paprika, cumin, salt, and black pepper to a large bowl.
Mix to combine. Gently stir the mixture until all the ingredients are evenly incorporated.
Form the patties. Divide the mixture into four equal portions. (I like to weigh the total mixture on a food scale and divide by four for perfectly even patties!) Place the turkey burger patties on a parchment-lined baking sheet and chill in the refrigerator for 15 minutes. While the burgers chill, preheat your oven to350°F.
Bake the patties. Once the oven is preheated, place the parchment-lined baking sheet in the oven and bake for 15–17 minutes, or until the internal temperature reaches 165°F. If you're adding pepper jack cheese, place a slice on each patty during the last minute of baking so it gets perfectly melty.

Cook the patties for 4–5 minutes per side until they have distinct grill marks and are cooked through. On the Stovetop: Heat a large cast-iron skillet over medium heat with one tablespoon of oil. Once hot, add the patties and cook for 5–6 minutes per side. They should be beautifully golden with an internal temperature of 165°F.
