Burrata Caprese Salad With Cherry Tomatoes

Burrata Caprese is a twist on the classic Caprese salad. Marinated cherry tomatoes on top of creamy burrata drizzled with olive oil and flakes of sea salt. This recipe is fresh flavorful and perfect for summer!

Ingredients

  • 4 cups (24 ounces) cherry tomatoes, sliced in half
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • 2 tablespoons chopped fresh basil, plus additional leaves for garnish
  • 1 tablespoon minced fresh thyme,
  • 1 teaspoon minced garlic
  • flaky sea salt, black pepper, and red pepper flakes to taste
  • 2 (4-ounce) burrata cheese balls, at room temperature

Instructions

  • Make the vinaigrette. In a medium-sized bowl, whisk together the olive oil, balsamic vinegar, apple cider vinegar, honey, garlic, chopped basil, and chopped thyme. Season with a pinch of flaky sea salt, black pepper, and red pepper flakes.
  • Add sliced cherry tomatoes. Toss to combine and set aside. Allow the tomatoes to marinate for 30 minutes. At this time pull the burrata out of the refrigerator to come to room temperature.
  • Plate the burrata. To serve, break the balls of burrata over a serving platter.
  • Spoon the tomatoes on top. Arrange the tomatoes around the burrata with a few fresh basil leaves. Lightly drizzle the top of the burrata cheese with olive oil. Add a few more flecks of flaky sea salt, black pepper, and red pepper flakes to finish. Serve with toasted bread or crackers.

Notes

Serve at room temperature: You want both the marinated tomatoes and burrata to be served at room temperature. If marinating the tomatoes overnight, bring them to room temperature before plating, and allow the burrata to sit out for 30 minutes before serving.
