Ingredients

For The Steak

  • 1 ½ pounds steak, cut into bite-sized pieces (ribeye, sirloin, or filet mignon)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 1 tablespoon (15ml) avocado oil
  • 3 tablespoons (42g) unsalted butter
  • 1 tablespoon minced garlic
  • ¼ cup parsley, finely chopped

For The Potatoes

  • pounds yellow baby potatoes, halved
  • tablespoons (23ml) avocado oil
  • 1 teaspoon garlic powder
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon parsley, finely chopped

Instructions

  • Season the steak thoroughly. First, pat the steak cubes dry with a paper towel. This helps the seasoning adhere better and promotes a good sear. Then, season the steak generously with salt, black pepper, and red pepper flakes. Ensure all sides of the steak pieces are evenly coated with the seasonings. Let the steak sit at room temperature while you prepare the potatoes. 
  • Prepare the potatoes for roasting. Preheat the oven to 400°F. Begin by slicing the potatoes in half. Then, in a large bowl, toss the halved potatoes with avocado oil, garlic powder, salt, and black pepper. Ensure the potatoes are evenly coated with the oil and seasonings for optimal flavor and crisping during roasting.
  • Roast the potatoes until golden and tender. Arrange the seasoned potato halves in a single layer on a large, unlined baking sheet. Ensure they are not overcrowded to promote even cooking and browning. Roast in the preheated oven for 20 to 25 minutes, or until the potatoes are easily pierced with a fork, indicating they are tender. They should also have developed a beautiful golden brown color and slightly crispy edges.
  • Garnish potatoes. Once the roasted potatoes are tender and golden, carefully transfer them to a serving plate. Toss the potatoes in freshly chopped parsley for a final touch of color and fresh flavor.
  • Sear the steak bites for maximum flavor. Place a large cast-iron pan over medium-high heat and let it get very hot. Once the pan is sufficiently heated, add the oil. When the oil begins to shimmer, it's ready for the steak. Add the seasoned steak bites to the hot pan in a single, even layer, being careful not to overcrowd the pan. Sear the steak for approximately 1 to 2 minutes per side, until a rich brown crust forms. Work quickly to flip the steak with a pair of tongs when ready. Once browned on all sides, remove the steak bites from the pan and transfer them to a clean plate.
  • Prepare the aromatic garlic butter sauce. Reduce the heat under the cast-iron pan to medium-low. Add the butter to the pan and let it melt. Once melted, add the minced garlic. Sauté for about 30 seconds, stirring frequently, until it becomes fragrant.
  • Combine the steak with the garlic butter. Return the seared steak bites to the pan with the butter sauce. Gently stir the steak to ensure each piece is thoroughly coated. Once the steak is well-coated, remove the pan from the heat.
  • Garnish the steak and serve with potatoes. Finally, stir in the freshly chopped parsley. The residual heat will gently wilt the parsley and infuse its bright, herbaceous flavor into the sauce and steak. Serve immediately alongside the roasted potatoes. 

Notes

For perfectly cooked steak bites, keep a close watch! These tender steak bites reach medium-rare to medium with an internal temperature of 125°F to 130°F in just a few minutes. If you prefer your steak well-done, simply cook it for an extra minute or two per side, being careful not to overcook and making the steak tough.
