Honey Lavender Simple Syrup

Equipment

  • 1 fine mesh strainer

Ingredients

  • ¼ cup (84g) honey
  • ¼ cup filtered water
  • 1 tablespoon culinary-grade dried lavender

Instructions

  • Dissolve the honey. Add the honey, water, and lavender buds to a small saucepan. On medium heat bring the saucepan to a simmer, but not boiling, and whisk until the honey is completely dissolved.
  • Allow the lavender to steep. Remove the saucepan from the heat, and let the honey-lavender mixture steep for one hour. Set a timer so you don't forget.
  • Strain the lavender. Using a fine mesh sieve, strain the lavender into an airtight glass jar. Discard lavender. Add a tablespoon to your favorite cocktails or coffee beverages.

Notes

  • Look for culinary-grade dried lavender.
  • Do not boil the simple syrup as the lavender will become bitter.
