    Honey Lavender Simple Syrup Ingredients

    You'll need only 3 ingredients to make this easy honey lavender syrup.

    • Honey: I recommend using organic raw honey, as it contains the most nutrients. If you have a local farmer's market you can usually find good quality honey there. 
    • Culinary Dried Lavender: You can use French or English Lavender, just as long as it's culinary-grade.
    • Water: You’ll need filtered water to mix with the honey for the simple syrup.

    How To Make Honey Lavender Simple Syrup

    Dissolve the honey. Add the honey, water, and lavender buds to a small saucepan. On medium heat bring the saucepan to a simmer, but not boiling, and whisk until the honey is completely dissolved.

    Allow the lavender to steep. Remove the saucepan from the heat, and let the honey-lavender mixture steep for one hour.

    Strain the lavender. Using a fine mesh sieve, strain the lavender into an airtight glass jar. Discard lavender. Add the syrup to your favorite cocktails or morning coffee.

    Substitutions & Variations

    • Vegan - use organic pure maple syrup in place of honey to make this recipe vegan.
    • Botanical - adding fresh herbs such as thyme or rosemary will give this simple syrup more of a botanical flavor.
    • Large batch - this recipe can easily be doubled or tripled.

    Tips For Success

    • Do not let the mixture boil. Avoid letting the simple syrup come to a boil otherwise, the lavender flavor may turn bitter. Once the honey is warmed on the stovetop it will quickly dissolve in the water and then you can turn off the heat.
    • Use a fine mesh strainer. If some of the lavender gets through the strainer you can always strain the syrup twice if desired.

    • Store the homemade lavender honey simple syrup in an airtight container in the refrigerator for 7-10 days. Give the syrup a few stirs before using, and discard the if it begins to look overly cloudy.

    • ¼ cup (84g) honey
    • ¼ cup filtered water
    • 1 tablespoon culinary-grade dried lavender
