Crispy Roasted Broccoli is a quick and healthy side dish that's perfect for any day of the week. To make it, you'll toss broccoli florets in olive oil and your favorite spices, then roast them in the oven until they're crisp and golden. A squeeze of fresh lemon juice at the end adds a bright finishing touch.

Why You'll Love This Roasted Broccoli

This roasted broccoli recipe is a flavorful and simple side dish that comes together effortlessly. The tender florets are coated in a potent blend of garlic powder, salt, black pepper, and red pepper flakes for a subtle kick. After roasting, the broccoli has a crisp-tender texture and beautifully caramelized outer edges. A squeeze of fresh lemon juice at the end brightens all the savory and spicy notes. This simple, healthy, and satisfying side dish pairs wonderfully with honey mustard salmon and hot honey salmon. Guaranteed to become one of your favorite vegetables that's in your meal rotation. Here are a few more reasons why you will love this delicious side dish:

    • Easy cleanup. Because you're roasting the broccoli on a single sheet pan, you only have one dish to wash.
    • It’s a perfect vehicle for different flavors. While the recipe is fantastic on its own, it can be easily customized with other additions. You can sprinkle on Parmesan cheese, add a drizzle of balsamic glaze, or toss in other spices to change it up.

    Ingredient Notes

Here are a few notes on some of the key ingredients to make this roasted broccoli. See the recipe card below for exact measurements.

    • Broccoli: For this recipe, you can either buy a large head of fresh broccoli that you cut off the stem, or a 12-ounce bag of pre-cut florets.
    • Garlic Powder: I like using garlic powder because it's less likely to burn compared to garlic cloves or fresh garlic.
    • Lemon Juice: A squeeze of fresh lemon juice adds a bright, citrusy flavor that you won't want to skip.

    How To Make Roasted Broccoli

Here's an overview of how to make this recipe. For complete instructions, you can jump to the recipe card.

    • Step 1: Prepare the broccoli. Cut broccoli into bite-size pieces. On a baking sheet, toss with olive oil until coated. Add garlic powder, salt, pepper, and red pepper flakes, then toss again. Spread in a single layer, with the flat sides down.
    • Step 2: Cook the broccoli. Roast broccoli for 20 minutes until golden brown. Add a squeeze of lemon juice and serve.

    Cooking Tips

    • Don't crowd the baking sheet. For perfectly browned, crispy edges, make sure there's enough space between the florets and that they are in an even layer. This prevents them from steaming instead of roasting. If needed, use two baking sheets.
    • Slice the florets evenly. Cut the broccoli florets into uniform, bite-sized pieces for better roasting. Smaller florets are more prone to burning, while larger pieces may take longer to cook.

    Storage Instructions

    • Storage: The cooked broccoli can be stored in an airtight container for 3-4 days.
    • Reheating: Reheat in the air fryer until warm or in the microwave.

    Common Questions

How do I make my roasted broccoli crispy, not soggy?

Avoid overcrowding the pan for crispy broccoli. When they're too close, they steam instead of roasting. Use a large sheet pan and spread the pieces in a single layer. If you're making a big batch, use two pans.
Roasting at a high temperature, typically between 400°F and 425°F, is crucial, as a hot oven quickly evaporates moisture, leading to those desirable, crispy, caramelized edges. Finally, use enough extra virgin olive oil. A generous, light coating of oil on every piece helps the florets brown and become crisp.
